The Golden Sister’s Famous Cream Puffs

Mary’s Braccioli

Ingredients — CREAM

  • 4 eggs
  • 3/4 cup of sugar
  • 1 quart milk
  • lemon rind
  • 1 cinnamon stick
  • 3 tspn vanilla
  • 1 cup sifted flour

Directions — CREAM

  1. Beat 4 eggs and ad ¾ cup of sugar
  2. Put in pot together with 1 quart milk
  3. In a separate bowl put ¾ cup of sugar and 1 cup of sifted flour
  4. Mix together with a fork
  5. Add a little of the hot milk mixture to the flour and sugar and mix together until smooth (no lumps)
  6. Add mixture into pot and stir constantly until thickens
  7. Be sure it comes to a boil
  8. Place in bowl, cool 1-2 hours in the refrigerator

Ingredients — PUFF

  • 1 cup of water
  • 1 stick of margarine
  • 1 cup of flower
  • 1 tspn. baking powder
  • 1/2 tspn vanilla
  • pinch of salt
  • 5-6 eggs

Directions — PUFF

  1. Boil 1 cup of water together with 1 stick of margarine
  2. When melted and boiling, add flour, baking powder, salt and vanilla and mix until on piece
  3. Remove from stove, mix a little more, place in mixing bowl and let cool for 10 minutes
  4. Add approximately 5 extra eggs (one at a time) and beat until smooth
  5. When you see air bubbles, it’s ready
  6. Spoon out on cookie tray about an inch apart for each puff
  7. Buon apetito!
