Stuffed Lamb

Ingredients

  • 5 lamb shanks
  • 2 cloves of garlic
  • 1 bunch of parsley
  • 1 cup of pecorino cheese
  • salt
  • pepper
  • 6 large cloves of garlic
  • 1 cup of red win
  • 1/4 olive oil

Directions

  1. Preheat oven to 350
  2. In a flat roasting pan add olive oil, chopped onions and garlic (this is the mixture)
  3. Make 3 pockets in each lamb shank
  4. Stuff mixture in each pocket of the lamb shank
  5. Lay on chopped garlic and onions, cover and cook for 2 hours at 350
  6. Take cover off
  7. Cook for 1 more hour (without cover) then serve
  8. Buon apetito!

Chicken & BreadCrumbs

Ingredients

  • breadcrumbs
  • parmesan cheese
  • chicken breast
  • eggs
  • salt
  • pepper
  • oregano
  • garlic
  • parsley

Directions

  1. In a bowl mix breadcrumbs, parmesan cheese, salt, pepper, oregano, garlic, and parsley
  2. Place chicken breast in scrambled egg
  3. Then in breadcrumbs
  4. Place chicken in a pan (spread olive oil over pan)
  5. Bake 7 minutes on each side
  6. Serve & ENJOY!

Mary’s Italian Meatloaf

Italian Meatloaf

Ingredients

  • 2lbs meat
  • 1lb sausage (take out of casing)
  • 1 cup of cheese (pecorino)
  • 1 cup of parsley
  • 1/2 cup of provolone
  • 3 cloves of garlic (chopped)
  • 1 cup of crushed Italian tomatoes
  • 1 cup of breadcrumbs

Directions

  1. Preheat oven to 350
  2. Mix ingredients together
  3. Cook for 1 hour
  4. Buon apetito!
