Stuffed Lamb
Ingredients
- 5 lamb shanks
- 2 cloves of garlic
- 1 bunch of parsley
- 1 cup of pecorino cheese
- salt
- pepper
- 6 large cloves of garlic
- 1 cup of red win
- 1/4 olive oil
Directions
- Preheat oven to 350
- In a flat roasting pan add olive oil, chopped onions and garlic (this is the mixture)
- Make 3 pockets in each lamb shank
- Stuff mixture in each pocket of the lamb shank
- Lay on chopped garlic and onions, cover and cook for 2 hours at 350
- Take cover off
- Cook for 1 more hour (without cover) then serve
- Buon apetito!
