Josie’s Pasta with Fried Breadcrumbs & Anchovies

Ingredients
- breadcrumbs
- olive oil
- garlic
- 2 cans of anchovies
- pasta (any kind you want)
Directions
- Sauté breadcrumbs in olive oil until very bronze
- Set aside
- In a pan place garlic clove and when the garlic is very, very brown add 2 cans of anchovies
- Let sizzle for 2 minutes, add the pasta and breadcrumbs as you add the cheese
- Buon appetito!
Josie’s Stuffed Mushrooms

Stuffed Mushrooms
Ingredients
- breadcrumbs
- parmesan cheese
- oregano
- garlic
- salt
- pepper
- scallions
- mushrooms
Directions
- In a bowl mix breadcrumbs, parmesan cheese, oregano, garlic, salt and pepper
- In a sauce pan mix olive oil and scallions (cut real thin and small)
- Add breadcrumb mixture and let it got real crumbly (this will be your stuffing)
- Remove stems from mushrooms and add stuffing
- Bake for 20 minutes in pan adding a little water to the bottom of the pan
- Buon appetito!
Mary’s Braccioli

Mary’s Braccioli
Ingredients
- 6 Milanese steaks (very, very thin)
- 2 cups of parsley
- 2 cups of grated pecornio
- 3 cups of hot sausage
- 1/2 cup of hot peppers
- 6 cloves of garlic (cut very small)
- 1 cup of olive oil
- salt
- pepper
Directions
- Take sausages out of casing
- Spread them on the milanese steaks
- Add parsley, grated cheese, garlic, and hot peppers
- Roll up the steaks (with sausage, cheese, garlic and peppers) and ties with a thread so it stays good and tight
- In a hot pan put all 6 rolled up steaks and cook real fast on one side
- Turn and cook on the other side
- Make sure the stove is on full blast and cook steaks for 20 mins

Mary’s Broccoli/Cauliflower Pasta

Broccoli & Cauliflower Pasta
Ingredients
- 1lb broccoli
- 1lb cauliflower
- 1lb pasta
- 1/4 cup olive oil
- 4 cloves of garlic
Directions
- Fill a large pot with water and a tablespoon of salt
- Wait for it to boil
- Add broccoli, cauliflower, and salt and wait for the water to boil again
- Add pasta and let cook for 15 minutes then drain
- In a small pan add 1/4 cup of olive oil and garlic (make sure it’s good and brown)
- Pour in pasta
- Buon apetito!

Baked Tomatoes and Pasta
Ingredients
- rice
- basil
- garbanzo beans
- salt
- pepper
- bay leaf
- onions
Directions
- Soak garbanzo beans over night
- Cook for 1 hour adding in salt and a bay leaf
- Cook rice and place in basil
- Add rice to the garbanzo beans
- Slice onions paper thin
- In a pan sauté the onions until very brown
- Pour onions and olive oil over the rice and garbanzo beans
- Buon appetito!
The Golden Sister’s Famous Cream Puffs

Mary’s Braccioli
Ingredients — CREAM
- 4 eggs
- 3/4 cup of sugar
- 1 quart milk
- lemon rind
- 1 cinnamon stick
- 3 tspn vanilla
- 1 cup sifted flour
Directions — CREAM
- Beat 4 eggs and ad ¾ cup of sugar
- Put in pot together with 1 quart milk
- In a separate bowl put ¾ cup of sugar and 1 cup of sifted flour
- Mix together with a fork
- Add a little of the hot milk mixture to the flour and sugar and mix together until smooth (no lumps)
- Add mixture into pot and stir constantly until thickens
- Be sure it comes to a boil
- Place in bowl, cool 1-2 hours in the refrigerator
Ingredients — PUFF
- 1 cup of water
- 1 stick of margarine
- 1 cup of flower
- 1 tspn. baking powder
- 1/2 tspn vanilla
- pinch of salt
- 5-6 eggs
Directions — PUFF
- Boil 1 cup of water together with 1 stick of margarine
- When melted and boiling, add flour, baking powder, salt and vanilla and mix until on piece
- Remove from stove, mix a little more, place in mixing bowl and let cool for 10 minutes
- Add approximately 5 extra eggs (one at a time) and beat until smooth
- When you see air bubbles, it’s ready
- Spoon out on cookie tray about an inch apart for each puff
- Buon apetito!

Baby Artichokes
Ingredients
- baby artichokes
- garlic
- olive oil
Directions
- Clean baby artichokes until only the hearts are left
- Fry garlic and olive oil until garlic is golden brown
- Place artichokes in the pan and toss until all the artichokes are covered in oil
- Add water
- Let cook until tender
- Buon appetito! (the go great on a sandwich)
Mary’s Pasta Pizzolla

Pasta Pizzolla
Ingredients
- 1/4 cup olive oil
- 3 bunches of scallions (green onions)
- 1lb frozen peas
- pasta
Directions
- In a pan add olive oil and heat it
- Add in scallions
- Add frozen peas, salt and pepper, and cover for 20 minutes
- Cook pasta separately and when done drain the water and put pasta back in pot
- Buon apetito!

Baked Tomatoes and Pasta
Ingredients
- onion
- olive oil
- salt
- pepper
- fresh basil
- large tomatoes
- pasta — any you choose but I suggest linguine
Directions
- Preheat oven to 400
- Slice onion very thin and place in 8X12inch pan with olive oil
- Place tomatoes (sliced in 4 wedges) on top of onions
- Add salt and pepper and lots of fresh basil
- Cook linguine
- Add butter
- Add the baked tomatoes
- Buon appetito!
