Josie’s Pasta with Fried Breadcrumbs & Anchovies

Ingredients

  • breadcrumbs
  • olive oil
  • garlic
  • 2 cans of anchovies
  • pasta (any kind you want)

Directions

  1. Sauté breadcrumbs in olive oil until very bronze
  2. Set aside
  3. In a pan place garlic clove and when the garlic is very, very brown add 2 cans of anchovies
  4. Let sizzle for 2 minutes, add the pasta and breadcrumbs as you add the cheese
  5. Buon appetito!

Stuffed Mushrooms

Ingredients

  • breadcrumbs
  • parmesan cheese
  • oregano
  • garlic
  • salt
  • pepper
  • scallions
  • mushrooms

Directions

  1. In a bowl mix breadcrumbs, parmesan cheese, oregano, garlic, salt and pepper
  2. In a sauce pan mix olive oil and scallions (cut real thin and small)
  3. Add breadcrumb mixture and let it got real crumbly (this will be your stuffing)
  4. Remove stems from mushrooms and add stuffing
  5. Bake for 20 minutes in pan adding a little water to the bottom of the pan
  6. Buon appetito!

Mary’s Braccioli

Mary’s Braccioli

Ingredients

  • 6 Milanese steaks (very, very thin)
  • 2 cups of parsley
  • 2 cups of grated pecornio
  • 3 cups of hot sausage
  • 1/2 cup of hot peppers
  • 6 cloves of garlic (cut very small)
  • 1 cup of olive oil
  • salt
  • pepper

Directions

  1. Take sausages out of casing
  2. Spread them on the milanese steaks
  3. Add parsley, grated cheese, garlic, and hot peppers
  4. Roll up the steaks (with sausage, cheese, garlic and peppers) and ties with a thread so it stays good and tight
  5. In a hot pan put all 6 rolled up steaks and cook real fast on one side
  6. Turn and cook on the other side
  7. Make sure the stove is on full blast and cook steaks for 20 mins
  8. Buon appetito!

Mary’s Broccoli/Cauliflower Pasta

Broccoli & Cauliflower Pasta

Ingredients

  • 1lb broccoli
  • 1lb cauliflower
  • 1lb pasta
  • 1/4 cup olive oil
  • 4 cloves of garlic

Directions

  1. Fill a large pot with water and a tablespoon of salt
  2. Wait for it to boil
  3. Add broccoli, cauliflower, and salt and wait for the water to boil again
  4. Add pasta and let cook for 15 minutes then drain
  5. In a small pan add 1/4 cup of olive oil and garlic (make sure it’s good and brown)
  6. Pour in pasta
  7. Buon apetito!

Baked Tomatoes and Pasta

Ingredients

  • rice
  • basil
  • garbanzo beans
  • salt
  • pepper
  • bay leaf
  • onions

Directions

  1. Soak garbanzo beans over night
  2. Cook for 1 hour adding in salt and a bay leaf
  3. Cook rice and place in basil
  4. Add rice to the garbanzo beans
  5. Slice onions paper thin
  6. In a pan sauté the onions until very brown
  7. Pour onions and olive oil over the rice and garbanzo beans
  8. Buon appetito!

Mary’s Braccioli

Ingredients — CREAM

  • 4 eggs
  • 3/4 cup of sugar
  • 1 quart milk
  • lemon rind
  • 1 cinnamon stick
  • 3 tspn vanilla
  • 1 cup sifted flour

Directions — CREAM

  1. Beat 4 eggs and ad ¾ cup of sugar
  2. Put in pot together with 1 quart milk
  3. In a separate bowl put ¾ cup of sugar and 1 cup of sifted flour
  4. Mix together with a fork
  5. Add a little of the hot milk mixture to the flour and sugar and mix together until smooth (no lumps)
  6. Add mixture into pot and stir constantly until thickens
  7. Be sure it comes to a boil
  8. Place in bowl, cool 1-2 hours in the refrigerator

Ingredients — PUFF

  • 1 cup of water
  • 1 stick of margarine
  • 1 cup of flower
  • 1 tspn. baking powder
  • 1/2 tspn vanilla
  • pinch of salt
  • 5-6 eggs

Directions — PUFF

  1. Boil 1 cup of water together with 1 stick of margarine
  2. When melted and boiling, add flour, baking powder, salt and vanilla and mix until on piece
  3. Remove from stove, mix a little more, place in mixing bowl and let cool for 10 minutes
  4. Add approximately 5 extra eggs (one at a time) and beat until smooth
  5. When you see air bubbles, it’s ready
  6. Spoon out on cookie tray about an inch apart for each puff
  7. Buon apetito!

Baby Artichokes

Ingredients

  • baby artichokes
  • garlic
  • olive oil

Directions

  1. Clean baby artichokes until only the hearts are left
  2. Fry garlic and olive oil until garlic is golden brown
  3. Place artichokes in the pan and toss until all the artichokes are covered in oil
  4. Add water
  5. Let cook until tender
  6. Buon appetito! (the go great on a sandwich)

Mary’s Pasta Pizzolla

Pasta Pizzolla

Ingredients

  • 1/4 cup olive oil
  • 3 bunches of scallions (green onions)
  • 1lb frozen peas
  • pasta

Directions

  1. In a pan add olive oil and heat it
  2. Add in scallions
  3. Add frozen peas, salt and pepper, and cover for 20 minutes
  4. Cook pasta separately and when done drain the water and put pasta back in pot
  5. Buon apetito!

Baked Tomatoes and Pasta

Ingredients

  • onion
  • olive oil
  • salt
  • pepper
  • fresh basil
  • large tomatoes
  • pasta — any you choose but I suggest linguine

Directions

  1. Preheat oven to 400
  2. Slice onion very thin and place in 8X12inch pan with olive oil
  3. Place tomatoes  (sliced in 4 wedges) on top of onions
  4. Add salt and pepper and lots of fresh basil
  5. Cook linguine
  6. Add butter
  7. Add the baked tomatoes
  8. Buon appetito!
