Stuffed Lamb

Ingredients

  • 5 lamb shanks
  • 2 cloves of garlic
  • 1 bunch of parsley
  • 1 cup of pecorino cheese
  • salt
  • pepper
  • 6 large cloves of garlic
  • 1 cup of red win
  • 1/4 olive oil

Directions

  1. Preheat oven to 350
  2. In a flat roasting pan add olive oil, chopped onions and garlic (this is the mixture)
  3. Make 3 pockets in each lamb shank
  4. Stuff mixture in each pocket of the lamb shank
  5. Lay on chopped garlic and onions, cover and cook for 2 hours at 350
  6. Take cover off
  7. Cook for 1 more hour (without cover) then serve
  8. Buon apetito!
