Baby Artichokes
Ingredients
- baby artichokes
- garlic
- olive oil
Directions
- Clean baby artichokes until only the hearts are left
- Fry garlic and olive oil until garlic is golden brown
- Place artichokes in the pan and toss until all the artichokes are covered in oil
- Add water
- Let cook until tender
- Buon appetito! (the go great on a sandwich)

I do the same thing when my husband is out! I usulaly put together something that he does not like to eat but I do. Finding something healthy for one that is quick to prepare can be difficult at times, but it looks like you landed on a good recipe. I will need to keep this recipe for the meal for one, thanks for posting this.
I was always intemnatid too (think it was the heart that scares me), but roasting them in the oven instead of the boiling method was a breeze. It does take a while, but worth it and the liked the baked texture compaired to the sogginess that sometimes comes from boiling.Let me know if you make them!!Take Care,Connie
