Baby Artichokes

Ingredients

  • baby artichokes
  • garlic
  • olive oil

Directions

  1. Clean baby artichokes until only the hearts are left
  2. Fry garlic and olive oil until garlic is golden brown
  3. Place artichokes in the pan and toss until all the artichokes are covered in oil
  4. Add water
  5. Let cook until tender
  6. Buon appetito! (the go great on a sandwich)

  1. I do the same thing when my husband is out! I usulaly put together something that he does not like to eat but I do. Finding something healthy for one that is quick to prepare can be difficult at times, but it looks like you landed on a good recipe. I will need to keep this recipe for the meal for one, thanks for posting this.

  2. I was always intemnatid too (think it was the heart that scares me), but roasting them in the oven instead of the boiling method was a breeze. It does take a while, but worth it and the liked the baked texture compaired to the sogginess that sometimes comes from boiling.Let me know if you make them!!Take Care,Connie
